Chicken Broth Pasta

One of Ning's favourite pasta is this Seashells, . She enjoys scooping the ingredients and placed them inside the shells before she eats them.


I'll boil chicken or ribs broth, store them in small portions in the freezer. This one is made of chicken bones and carrot. This way, its easy to repare pasta or noodle soup for Ning's breakfast or lunch. Sometimes I'd also just use them as soup for her dinner.

Mini Rasberry White Chocolate Cupcakes


I was baking some cupcakes for Ning's classmates yesterday, used up the ramains of the batter for these mini ones. They are really tiny and cute. Ning ate 8 and still want more.

Peach Muffins



Thanks Aunty Yochana for sharing the recipe for this muffins. They are really good... soft and fluffy and refreshing! Just like what I expected them to be. This is a simple n easy recipe, and the best part is, you dun need to use a electric mixer to make these, so one less tools to wash :)

Shrimp porridge with dried scallop


Cooked a big pot of shrimp porridge with the remaining rice.. Yummy!

Rice Pancake



We have plenty of left over rice from our last mj session. So this morning, I decided to try a Rice Pancake recipe from a Kid's Meal cookbook. Its easy to make and really yummy, ning's daddy likes them too.

Here is my modified version of the recipe.

1 bowl of cook rice

2 eggs

1 tbsp fish sauce or soya sauce

2 tbsp cooked peanuts

2 slices of ham (diced)

pinch of pepper

The original recipe calls for chopped spring onions and deep fried anchovies, you can add them if you like.

Mix all ingredients in a bowl

Heat oil in a non-stick flat-bottom frying pan, pour 2 spoonful of rice mixture and pan-fry till both sides turns golden brown.

Serve with your favourite chilli sauce or sweet sauce for the kids.

Doughnuts Wannabes



I meant to make doughnuts, but ended up with these chocolate chips sweet buns instead.
I've never tried making bread, the "proving" steps always holds me back from trying out any bread recipe.
I turn to a packet of doughnut premix for a easy 1st bread making experience. The instructions were simple, just add water to the premix, beat with a mixer and leave it to prove, then shape and fry them.. sounds like simple. But, my mixer went dead halfway thru my mixing process, I have to hand massage them further, and leave the dough covered to prove. 30mins later, my dough grown double. I happily rolled them out wanting to shape them with my cutter.. I couldn't do it properly, after messing with them for a while, the dough flattens out. I let them prove again. Another 20mins later, I try to shape them again, but they still flopped. In the end, I just threw in some chocolate chips, rolled them into a swissroll and cut into small portions, leave it to prove for another 20mins and bake them in the oven. I didn't want to fry them cos I'm afraid they might not make it and I will ended up wasting more oil.
Surprisingly, the bread turns out nicely from the oven, really taste like freshly bake sweet buns! Soft and fluffy. So, I failed miserably with the doughnuts, but still managed to salvage a pass with the buns right? :)

Chicken Mushroom on Chyesim




One of my specialty is to use whatever we have in the fridge, and cook them into one-pot, or one bowl... this one turns out pretty well, I have chyesim, oyster mushrooms and a chicken thigh. This is what I did.



Season chicken with oystersauce and cornstarch


Add a little oil and salt to a pot of boiling water, boil chyesim till cooked and set side


In a wok, fry garlic in oil, add chicken, abit of chinese wine, fry till cooked


Add mushroom, oystersauce and water, boil for another 2mins


Pour chicken and mushroom gravy over cooked chyesim

Horlick Doggy Cookies

I've been wanting to make these for the longest time, but my 1st attempt on these seems to have failed, my cookie dough was not properly done, and the cookies are not cooked. Gotten some advise from Happy Homebaker.. will try it again today!!!

The Hi 5 Circus Stage Show


Ning is a little Hi5 fan, it never fails to cheer her up whenever we put on a Hi5 vcd. When she was smaller, she would only sit still thru her meal if she gets to watch it.

So, since the band is in town, we decided to give her a treat. We managed to get a ticket on the first row from the stage and right in the centre, I was looking forward to see Ning sing and dance to the music just like she would when she watches Hi 5 at home... But, thru the 1st half of the show, ning was clinging to my body like a koala bear, she only started 'detached' from me, moved abit closer to the stage, swayed shyly to the music... when the show was almost ending.

We ended up spending more money on their merchandises than on the ticket. Now Ning would hug her Hi5 cushion whenever she watch Hi5, and we even have to hide the Tshirt cos she would want to wear it everyday...

Mocha Cupcakes

Saw this recipe from the latest copy of Women's Weekly magazine and I was very keen to try it out. It uses yogurt instead of butter. The coffee and cocoa aroma was heavenly while it bakes, but the taste was not as good as I've expected, the texture of the cake was abit rubbery, I think I did not beat the egg long enough. Will try making them again, hoping.. practice makes perfect!
