Coconut Oatmeal Cookies

Ingredients:

100g Quaker Instant Oats (blended)

150g wholemeal flour ( i used plain flour)

1 tsp baking powder

30g dessicated coconut

80g sugar

50g honey

120g butter (room temperature)

Method:

1. stir all dry ingredients together.

2. Add in butter and honey, beat with hook mixer till dough is form.

(I will add extra dessicated coconut if the dough is too wet)

3. shape your cookies and bake 170 for 20mins

Fried Yong Tou Fu with XO Sauce

Try this, it is a easy to prepared and delicious dish, goes well with a bowl of steaming rice or porridge.. and my favourite chilli.. yummy!

Just lightly deep fry the yong tou fu items and leave aside, then fry some garlic in oil, add xo sauce, oyster sauce and a little water, pour cooked gravy over the yong tou fu. You can try using black bean paste instead of xo sauce too.

Chicken Sausage Bun

Meet my chicken sausage buns. I so pleased with it. They are simply so delicious when freshly out of the oven.

I've burnt my mixer again... my 3rd one since i started baking. I've been baking for almost a year already. When I started, I couldn't even bake a simple sponge cake.. I looked back on all my previous bakes, gave myself a pat on the shoulder and hope I get better in the years to come.

And I must also thank people (you know who you are) who have put up with some of my lousy bakes along the way... :) And many fellow food bloggers whom I have learned so much from... THANK YOU!

Roast Chicken Salad

I was feeling like having salad for dinner one day, and came up with this Roast Chicken salad served with Japanese dressing.

Actually, I cheated, I bought lettuces and black pepper roast chicken thighs from Cold Storage... and simply put them together, topped with some walnuts I managed to extract from my box of Banana nut crunch cereals. I wonder if I could still label this as Home Cook Meals.. hehe...

A Merry Christmas

December is my favourite month in the year, I love the mood of Christmas. Now that its over and I'm glad my life has finally gotton back to normal, I found myself standing in front of the oven today, thinking .. what do I NEED to bake today.. I've been baking so much I feel weird when I'm not baking... We had 5 parties. It's been a really busy month. Not to mention and the never ending mahjong sessions thats leaves my body aching all over... Overall, My family and I had a good season, we are looking forward to the new year.

Xmas Party 2007

My buddy and I host a xmas party at my place for our friends, It was one of the best xmas party I've had. Lots of friends, yummy food, wine and VERY VERY loud music. Thanks to the DJ - my hubby! We had our condo security officers knocking at our door right after midnight.. hehe... who cares, we all had fun!

We had personalised cupcakes to welcome our guests!

Amy baked this delicious turkey, it was very good! The whole bird was almost gone by the end of the night. I wonder what happen to the wish bone!

We had a dress code for our party.. Yes, White Christmas! Don't these guys look handsome in white?

Fruit Cakes

I don't really like to eat fruit cakes, but I'm happy with the batch i baked for one of our xmas party. They are not dense and overly sweet like the traditional fruit cake. I can still taste the 5 different fruits I had in there, apricots, cranberries, rasins, pinapple, prunes. The trick to make your fruit cake well-liked - CUT DOWN ON THE SUGAR.

Fruit Tarts

Fruit tarts I made, I coated the tart shells with a thin layer of chocolate, filled them with instant mango pudding and top up with canned fruits.. its was easy to make and very fruiti-licious :)

For the record, I failed on my first batch of tart shell, shown above on the left, I just pressed a ball of dough into the tart case, it turns out so thick that I didn't even have enough space for fillings.. On my second attempt, I rolled out the dough evenly, quite thinly, before i lay them into the tart case... i works much better as shown above on the right. Lesson learned: Don't be lazy! hehe...

Housewarming Party @ West Bay

My buddy threw a housewarming party at her new home, I volunteered to help in preparing some of the food. Besides some cupcakes and macarons, there were curry, grilled chicken wings, fried mee hoon, curry puff, popiah, bo bo cha cha and Ben & Jerry's ice cream. Yummy spread!

I think we didn't took enough photos as we were busy the whole time.

I also made a batch of xmas cupcakes, but they toppled on their way to to party. hehe..

I baked some butter cookies and decorated them for Ning's 2nd birthday, I think they are pretty, don't you think so...

These cookies are actually quite small sized, they are not bigger than an inch, which makes me wished I had really tiny fingers when working on them. I had to "roll" my roses with 2 toothpick. But its also because they are so small, you can't really find fault in them. If you noticed, some of my roses are just a "bush" of sugar paste.

I learn about these little Italian cookies from Happy Home Baker's blog, do visit her blog to find out more about these cookies.

I did mine with ground hazelnut and uses nutella as fillings. I kept them in the fridge, they taste good when serve chilled.

I added a little heart to compliment its name.. I wonder if its still considered a Baci di Dama :)

I think I should pass some of these to my buddy, her boyfriend, being an Italian, should be able to tell me if I've gotten it right. Hopefully I'll get to meet her before they are all gone.

Coconut Flapjacks

When I first came across this recipe, I had no idea how flapjacks taste like. But still, I was keen to try it out cos I have all the ready ingredients, it doesn't need flour and I dun need to use a mixer, I hate to wash that.

These are really easy to make and they are delicious and addictive.

You may noticed I seldom post recipe for my bakes cos I am lazy to type them and besides, nobody ever ask me for my recipes.. hehe... But for this one, I really wanna share it with you, please give it a try.

100g butter
80g caster sugar
1 tbsp honey
135g oats
50g desiccated coconut

Grease a 7" baking tray, preheat oven at 170C
Place butter, sugar honey into a large saucepan over low heat, stir till just melted
Stir in oats, coconut and mix well until evenly combined
Placed the mixture on the prepared baking tray, spread it evenly across the tray and level the surface by pressing with a spoon
Bake for 30 minutes
Remove from oven and leave on the baking tray to cool for about 10mins
Cut the flapjacks into squares, carefully transfer them onto a bigger baking tray, placing them bottom side up.
Continue to bake for another 10-15mins till it turns golden and crispy on both sides

Note:

I use a shallow baking tray, it works well cos its easier to remove the flapjacks from the tray after baking.
you may not get a neat cut when cutting them cos its still rather soft after the 1st bake and the oats seems to be falling off when you cut. Thats ok, just gently stick them back in place. After the 2nd bake and when its totally cooled, It'll all harden and stick together nicely
I made 16 pieces of 3X3cm squares, you can double the ingredients if you wanna make more, or if you are using a bigger tray.

Marshmallow Cakes (Kiwi and Orange)

I decided to make these marshmallow cakes after I saw Baking Mum's beautifully made Peach Marshmallow Cakes. I have never eaten a marshmallow cake before, so I was rather curious how it would taste like. I was so anxious I took a slice of it before it really set. hehe... And I love it! Ning's daddy likes it too. It has a combination of salty (digestive biscuits), sweet (marshmallow fillings) and sourish (fruits) taste. The crusty biscuit base goes well with the toufu like marshmallow custard and the fruity jello. Take a mouthful and it feels like magic! Am I exaggerating? Try it and you will know :)

Macarons... I did it!

My buddy introduce these sweet little treats to me. The first time I had them, we were sharing a piece it in chocolate flavour. The second time I had them, we shared each of the 3 pieces we bought, they were rose, lychee, and chocolate banana flavors.

Since I've had enough of sharing these little thing, I decided to make them myself so I can eat as much I want :)

I invested in a candy thermometer, silpat, illy, Valrhona, lots of eggs, ground almonds and hazelnuts. I even got a new digital weighing machine, just an excuse to get rid of my old conventional one.

This is my first attempt on macarons, I use the Italian Meringue method and I tried out the coffee almond and chocolate hazelnut flavour.

I almost spend the entire evening measuring the ingredients very carefully, beating the egg whites, boiling the sugar syrup, stirring, mixing and piping.. okie i need more practice on this. I had the "skin" and the "feets" where they were supposed to be.

Somehow, I underbaked my 1st tray of hazelnut ones, had 2 cracked ones, and some in really odd sizes, I even had a few figures of 8 as I have piped them too closely. But I was glad the rest turns out quite nicely. They had eggshell-thin top crust, frilly skirting around the bottom, moist and alittle chewy interior. I am already very happy with my little achievement.

And of course, I can't wait to share them with my buddy.

I like the rich orange color of the smashed pumpkin.

I deliberately cut down on my brown sugar thinking that pumpkin has its original sweetness, but I can't really taste the pumpkin in these. Anyway, they are rather blend, so I spiraled some hazelnut cream. Not bad lah...

Chicken Broth Pasta

One of Ning's favourite pasta is this Seashells, . She enjoys scooping the ingredients and placed them inside the shells before she eats them.

I'll boil chicken or ribs broth, store them in small portions in the freezer. This one is made of chicken bones and carrot. This way, its easy to repare pasta or noodle soup for Ning's breakfast or lunch. Sometimes I'd also just use them as soup for her dinner.

Rice Pancake

We have plenty of left over rice from our last mj session. So this morning, I decided to try a Rice Pancake recipe from a Kid's Meal cookbook. Its easy to make and really yummy, ning's daddy likes them too.

Here is my modified version of the recipe.

1 bowl of cook rice

2 eggs

1 tbsp fish sauce or soya sauce

2 tbsp cooked peanuts

2 slices of ham (diced)

pinch of pepper

The original recipe calls for chopped spring onions and deep fried anchovies, you can add them if you like.

Mix all ingredients in a bowl

Heat oil in a non-stick flat-bottom frying pan, pour 2 spoonful of rice mixture and pan-fry till both sides turns golden brown.

Serve with your favourite chilli sauce or sweet sauce for the kids.

Doughnuts Wannabes

I meant to make doughnuts, but ended up with these chocolate chips sweet buns instead.

I've never tried making bread, the "proving" steps always holds me back from trying out any bread recipe.

I turn to a packet of doughnut premix for a easy 1st bread making experience. The instructions were simple, just add water to the premix, beat with a mixer and leave it to prove, then shape and fry them.. sounds like simple. But, my mixer went dead halfway thru my mixing process, I have to hand massage them further, and leave the dough covered to prove. 30mins later, my dough grown double. I happily rolled them out wanting to shape them with my cutter.. I couldn't do it properly, after messing with them for a while, the dough flattens out. I let them prove again. Another 20mins later, I try to shape them again, but they still flopped. In the end, I just threw in some chocolate chips, rolled them into a swissroll and cut into small portions, leave it to prove for another 20mins and bake them in the oven. I didn't want to fry them cos I'm afraid they might not make it and I will ended up wasting more oil.

Surprisingly, the bread turns out nicely from the oven, really taste like freshly bake sweet buns! Soft and fluffy. So, I failed miserably with the doughnuts, but still managed to salvage a pass with the buns right? :)

Chicken Mushroom on Chyesim

One of my specialty is to use whatever we have in the fridge, and cook them into one-pot, or one bowl... this one turns out pretty well, I have chyesim, oyster mushrooms and a chicken thigh. This is what I did.

Season chicken with oystersauce and cornstarch

Add a little oil and salt to a pot of boiling water, boil chyesim till cooked and set side

In a wok, fry garlic in oil, add chicken, abit of chinese wine, fry till cooked

Add mushroom, oystersauce and water, boil for another 2mins

Pour chicken and mushroom gravy over cooked chyesim

The Hi 5 Circus Stage Show

Ning is a little Hi5 fan, it never fails to cheer her up whenever we put on a Hi5 vcd. When she was smaller, she would only sit still thru her meal if she gets to watch it.

So, since the band is in town, we decided to give her a treat. We managed to get a ticket on the first row from the stage and right in the centre, I was looking forward to see Ning sing and dance to the music just like she would when she watches Hi 5 at home... But, thru the 1st half of the show, ning was clinging to my body like a koala bear, she only started 'detached' from me, moved abit closer to the stage, swayed shyly to the music... when the show was almost ending.

We ended up spending more money on their merchandises than on the ticket. Now Ning would hug her Hi5 cushion whenever she watch Hi5, and we even have to hide the Tshirt cos she would want to wear it everyday...

Mocha Cupcakes

Saw this recipe from the latest copy of Women's Weekly magazine and I was very keen to try it out. It uses yogurt instead of butter. The coffee and cocoa aroma was heavenly while it bakes, but the taste was not as good as I've expected, the texture of the cake was abit rubbery, I think I did not beat the egg long enough. Will try making them again, hoping.. practice makes perfect!

Fried Tang Hoon Omelette Soup

1/4 bundle tang hoon (soaked till softened, cut into 2cm-long section)
20g minced meat (I use chicken)
1/2 tsp chopped preserved vegetables (dong cai)
1 bowl of stock (I use chicken soup)
some wolfberries
1 tsp oil

Beat egg, add tang hoon, meat and dong cai, mix further.
Heat oil, pour in egg mixture and fry into an omelette.
Break it up into slices using the spatula
Add in stock and wolfberries and boil for another 10mins
Serve with rice

Ning can tell what she eats by tasting, today when I gave a mouthful of this, she chewed and said.. "shrimp!" then I asked, "and what?" She said "rice!"... Okie, she still can't say cauliflowers, but I'm not expecting that from a less than 2 years old either..

Anyway, she loves this, so I'm sharing the recipe.

2 Large Shrimp - diced
2 tbsp Cauliflowers - diced
1/2 tsp oyster sauce
1/2 tsp garlic - chopped
1/2 tsp oil
2 tbsp water

Boil cauliflowers in water and a pinch of salt till soften, set aside.
Heat oil and fry garlic, add shrimp and fry till cooked.
Add cauliflowers, oyster sauce and water
Fry for another 1 min.
Serve with rice.

Steam Egg Toufu

Ning had these for lunch today. Steamed egg toufu, topped with minced pork/carrot/sweet peas/mushrooms. I mixed everything together and season with a little corn starch and soya sauce, place a small portion on each egg toufu and steam them in the rice cooker while I cook the rice. Easy right? :)

A Nice Afternoon Date

Egg Pancake

Ning is a egg lover, she'll eat eggs cooked in anyway. She likes ham, mushrooms, toufu, fish, prawns, crab, chicken, pork and she'll always eats her greens... Actually, she eats everything! Did I also mention chocolates, marshmallows, ice creams and jelly... and she love love love soup!

Therefore, its easy to prepare her meals. She'll eat whatever I cook. I always try to make them look colorful and pretty, so she'll get excited and very keen to eat.

For this egg pancake, I steamed egg with spinach and ham, its easy to prepare, and goes well for her with rice.

Mini Cheese Sausage Rolls

Bought some of these tiny cheese sausages from Japan during our holiday. I rolled them in bread and lightly toasted them. Ning finished her scrumble eggs and started "playing" with the bread, trying to dig the sausages out of the bread... Aarruggh....

Trio Color Bento

During our holiday in Japan, one of the easiest meal I gave Ning was a bento like this. We can easily buy them from their convenient store such as FamilyMart or AM/PM. They will heat it up abit at the cashier when we pay and its ready to eat. Mine here is a simple version, what we get there for around 350yen consist of stuff like these and some fried items on the side, such as chicken nuggets, meat balls etc. I should have took a photo, sorry...

My 1st bento for Ning's dinner. Consisting of rice with fried salmon, shredded egg, buttered spinach and miso soup with egg tofu. Ning was very excited to see it and she enjoyed every bits of it!

and I got the cute lunch box from Daiso in Japan for 100yen.

Saw this recipe and I can't wait to try it out. Thanks to Little Corner of Mine for sharing your step by step instructions.

I don't have curry powder at home but was too eager to try it out. I thought of using tom yam paste to replace the curry powder.. emm... then it would be too spicy for ning.

So, I decided to wrap the shrimp with a slice of banana. I only season the shrimps with a wee bit of oyster sauce which i think it can do without any seasoning.

It taste good, looks good too.. hehe, we dip it with some mayonaise.. yummy snack!

Will try this again with curry powder and onions.. or maybe replace banana with mango.

A pleasant evening walk

When TT first came to our house, she saw the view of Pandan Reservoir from our balcony, and she said, "mum! can see the beach!"

Since its only 10mins walk away, and weather is fine, I decided to bring the girls out for a walk and show TT the "beach".

We brought along some "expired" bread, and TT enjoyed hand feeding them to Franklin. She even ask me if we could bring him home. NO!! was my answer, 3 Franklins had died under our care... so lets spare this one.

Ning had a good time too!

Pan Fried Cod with Mushrooms

On our recent 10 days trip to Tokyo/Osaka, Ning's meal times were distorted. She had only half a doughnut for lunch one day, and skipped meals for at least twice.. Every mealtime was a battle for me, nothing seems to interest her. She was too distracted by everything else, and never seems to be hungry. But its really obvious that her litttle tummy is getting flatter and flatter each day.. its driving me crazy... I wonder how many parents out there gets as panicky as me when their little ones dun eat well.

Now that we are back, I try to make up for her lost lbs. Here's a healthy yummy lunch I cooked for her, I am so pleased she eat up everything on her plate.

Pan-fried Cod with mushrooms, Ning finished up eveything on her plate with a small bowl of rice.
Fish seems to get more costly lately, a small portion of cod fish I bought from Supermarket costs S$8.

Cookie and cream ice cream on banana (coudn't find my chocolate syrup). A little bonus for her whenever she finish all her lunch. She gets to eat her portion of fruits as well. Ning loves ice cream so much that she can say "ice kim piss".. she meant "ice cream please..."

Mini Egg Tarts

My first egg tarts, did a batch of really mini ones. The pastry taste alright, but its a little too thick, I should've roll it more thinly, the egg custard looks more white than the usual yellow, maybe I should add one more egg to the custard mixture.. hmm... overall, its still edible lah.

Will try this again till I get it right.

Our Wedding Anniversary

We had dinner every year at the Hilltop Restaurant. That's where Ning's daddy had asked me to marry him. Its not a fancy restaurant, but its one of my favourite.

Once, when we were not driving, we foolishly think its romantic and managable to just walk down the hill after dinner. Luckily an old couple driving down hill offered to gave us a lift when they saw us in the middle of nowhere. While chatting, they said they frequent the restaurant way back when they were dating. I told Ning's daddy I want us to be like them, so we agreed to spend every of our anniversary there. Actually, tats not a bad idea, we don't have to crack of mind with where to eat every year.

I am a lucky woman, I have a loving hubby, a adorable and healthy child, and more than 50pairs of shoes... what more would I ask for... haha!

Luncheon Meat Rice

My mum often cook this for us when we were young, its super easy to prepare. I remembered mum told me our dad dislike eating this rice, I never asked why. 20years later, now, Ning's daddy didn't like it too... and I don't have to ask why. If he knows I'm cooking this, he'd say "huh, we no money liao izzit?" or he'd say "Coco (my Chiwawa)... dinner time!" I wondered if that's the same reason why my dad dislike this rice 2 decades ago. Maybe I should call this "Ego bruising rice" haha!

How to make:

Smash luncheon meat into your desired pieces and set aside

Cook rice in rice cooker as per normal

When rice is just cook, pour luncheon meat onto rice and cover for 5mins

Drizzle some dark soya sauce and sesame oil for added fragrant and taste.

Mix well and serve hot

I prefer to eat it plain with my favourite chili sauce.

For luncheon meat, I'd rather pay double for those that says "Product of Denmark" instead of the common ones that are produce in ... you know what I mean?

Lemon Muffins

200g self raising flour

30ml Lemon Juice

1tsp Lemon paste

200g Plain yogurt

100g Sugar

100g Butter

2 eggs

Mix butter and sugar and double boil in a pot over hot water. Stir till well blend and leave it to cool.
Add yogurt, lemon juice, lemon paste, eggs into the butter mixture, stir till well combined.
Pour mixture into sifted flour, fold lightly till well combined.
Bake in pre-heated oven at 180C for 25mins.

Rainbow

We are blessed with a great view from our larger than usual balcony, that's where Ning gets to watch aeroplanes, helicopters, birds and occasionally eagles, when they flew by. The sky does get alot busier lately due to the upcoming NDP.

Today, Ning gets to see a real rainbow for the first time, it only lasted a couple of minutes, I'm glad we caught it.

Cheese Toast

Ning had these cheese toast for breakfast this morning. I brushed some butter on the outside and "toast" them in a wok over the stove, pressed them flat when the cheese soften so they'll stick together, thin and a little crispy. Just right for her teething gums.

Mine had a slice of honey baked ham in them. Hmm... Ham with Cheese.. match made in heaven!

Whenever we have leftovers slices of bread that has reaches its expiry date, I'd toast them into these little snacks with butter and sugar. Some time ago, I saw from a blog I frequented that we can actually use milo as well.. Curious of how it'd taste like, I tried it out... they were good! It just gets abit sticky when cool, Ning enjoy the milo ones and I still prefers the good old butter and sugar version.

What is Miso?

Ning is a soup lover, she can sipped dry a bowl of any soup, anytime. As we dun have freshly brewed soup everyday, I turn to Miso paste for a quick and healthy alternative. Ning's daddy just brought back a tub of miso paste from Japan and I've explored a few recipes with it.

Ning had just finished her 2nd term at Shichida Methods, I remembered on the 1st lesson of our first term, there were 6 students in our class, Ning was the youngest and smallest in size. She have not even started walking while the rest were already roaming around the classroom. She was rather timid and shy in the beginning, always sticking to me like super glue... But now, she would be all over the classroom during the lesson.
