Decorated Cookies

I baked some butter cookies and decorated them for Ning's 2nd birthday, I think they are pretty, don't you think so...

These cookies are actually quite small sized, they are not bigger than an inch, which makes me wished I had really tiny fingers when working on them. I had to "roll" my roses with 2 toothpick. But its also because they are so small, you can't really find fault in them. If you noticed, some of my roses are just a "bush" of sugar paste.

Ladies' Kisses (Baci di Dama)

I learn about these little Italian cookies from Happy Home Baker's blog, do visit her blog to find out more about these cookies.

I did mine with ground hazelnut and uses nutella as fillings. I kept them in the fridge, they taste good when serve chilled.

I added a little heart to compliment its name.. I wonder if its still considered a Baci di Dama :)

I think I should pass some of these to my buddy, her boyfriend, being an Italian, should be able to tell me if I've gotten it right. Hopefully I'll get to meet her before they are all gone.

Biscotti - Cranberry Pistachio Cinnamon

Although I've sliced them very thinly, very little bite is still very flavourful. I like its strong Cinnamon aroma, the house smell of Cinnamon even after I've stored the biscotti away.

Ready to bake
Out of the oven
Sliced and ready for re-bake

Stored for own consumption :)

Macarons... I did it!

My buddy introduce these sweet little treats to me. The first time I had them, we were sharing a piece it in chocolate flavour. The second time I had them, we shared each of the 3 pieces we bought, they were rose, lychee, and chocolate banana flavors.

Since I've had enough of sharing these little thing, I decided to make them myself so I can eat as much I want :)

I invested in a candy thermometer, silpat, illy, Valrhona, lots of eggs, ground almonds and hazelnuts. I even got a new digital weighing machine, just an excuse to get rid of my old conventional one.

This is my first attempt on macarons, I use the Italian Meringue method and I tried out the coffee almond and chocolate hazelnut flavour.

I almost spend the entire evening measuring the ingredients very carefully, beating the egg whites, boiling the sugar syrup, stirring, mixing and piping.. okie i need more practice on this. I had the "skin" and the "feets" where they were supposed to be.

Somehow, I underbaked my 1st tray of hazelnut ones, had 2 cracked ones, and some in really odd sizes, I even had a few figures of 8 as I have piped them too closely. But I was glad the rest turns out quite nicely. They had eggshell-thin top crust, frilly skirting around the bottom, moist and alittle chewy interior. I am already very happy with my little achievement.

And of course, I can't wait to share them with my buddy.

Specially for you Pris!

Coconut Oatmeal Cookies

These are really good! After putting my 1st batch of cookies into the oven, I decided to try adding some dessicated coconut into the second batch of dough. And now, we keep digging into the cookies jar to fish out the ones with coconut.

Shortbread of Love

I just bought Agnes Chang's I CAN BAKE recipe book, I like it alot cos its bilingual and has step by step pics for methods. Its really useful for me who've never been to any baking classes.

This this the first recipe I tried, and also my first shortbread. I over baked my 1st batch of dough and they tasted like butter cookies. So for the second batch of dough, i cut my heart shapes thicker, and bake them till ONLY lighly brown. Finally, they tasted like shortbread, and I am satisfied with the result.

I would like to share this recipes cos I think its easy and yummy, do give it a try.

What you need:

250g butter
120g caster sugar
250g flour
120g rice flour

Chocolate for coating
(the original recipe ask to sprinkle some caster sugar on top before baking, I prefer to play with chocolate :P)

Methods:

Cream butter and sugar till well combined

Add in flour and rice flour

Roll out dough and cut into about 0.75cm thick.. hehe.. I meant more than 0.5cm and less than 1cm lah.

Sprinkle some caster sugar on top for decoration (if you want)

Bake in pre-heated oven at 180C for 15-20mins or till lightly brown.

Seaweed & Sesame Cookies

I had a packet of seaweed flakes thats expiring soon, so i search around for a recipe that i could use up my seaweed flakes, found Aunty Yochana's Vegetarian Salted Seaweed Cookies. I added some sesame and created these.
I dun really like the texture of these cookies, its abit powdery. And its really a painful job trying to push these little flowers out of the mould.
I'm giving these to my sis hoping she can leave them in her office and someone can help me finish them up. Thats doing justice to my aching fingers.. hehe..
Will still look around for a recipe that can produce thin and crispy seaweed cookies. If you have one, please share it with me. tks!

Cornflakes Cheese Cookies again

Another attempt on this and it turns out much better, I only tried one piece and the rest are packed into container and given to Ailin as a token of appreciation cos she help her friends ordered some cookies from me.
So, sometime now.. I still wonder how does this taste like.. hehe.. I can only remember it has a lemon fragrance cos I added lemon paste.
Will make some more of these for myself again.
